Michelin-starred chef Rene Redzepi to appear at Chef Conference 2008

Danish chef Rene Redzepi, one of Europe's brightest talents, will perform a culinary demonstration in the UK for the first time at Caterer and Hotelkeeper's annual Chef Conference in May.

Redzepi - whose Copenhagen restaurant, Noma, holds two Michelin stars - has become famous for pioneering a contemporary interpretation of Danish and Nordic cuisine showcasing the region's ingredients, including musk ox and ultra-fresh seafood.

His training is in the classical French tradition and he numbers a spell with the renowned Pourcel brothers at Le Jardin des Sens in Montpelier.

Jason Atherton, head chef at London's Maze restaurant, one of a stellar line-up of chefs cooking at the Chef Conference gala dinner, said: "Every now and then a chef comes along and makes a difference and Rene's one of them.
