Chef Tom Aikens to open Hong Kong restaurant
Chef Tom Aikens is set to open a restaurant called The Pawn in an old 1890s pawn shop in Hong Kong later this month.
Aikens is working in partnership with Press Room Group, which runs a collection of 15 restaurants and cafés in Hong Kong.
The building was previously occupied by a French-style bistro with a brunch style menu.
Aikens plans a more modern approach with a mixture of casual dining and some high-end dining, as well as a Botanicals bar where mixologists will make syrups and tonics for the bar using as many ingredients as possible from a garden ebing installed on the roof of the building. The bar has 90 covers, with a further 90 in the restaurant.
The whole of the roof terrace will be turned over to growing vegetables, edible flowers, salads and herbs, with thousands of seeds already planted.
Typical dishes on the restaurant menu will include: soy marinated mackerel, coriander powders, burnt onion; scallop Tartar Iberico ham, piquillo pepper; razor clams Mitsuba, black garlic, pickled white radish.
