Proudest career moment Winning a Warwickshire-based Godiva Award for Customer Service two years running in 2009 and 2010.
Greatest inspiration The feeling great hospitality gives people.
Ambition To open and run unique, special places with great service and yummy food.
Does hospitality do enough to encourage young people in the industry? Not as far as I know. I have certainly never seen a campaign to encourage youngsters to become chefs or front of house career seekers.
Do you think the industry does enough to promote training? No; I think there are few organisations out there that really train well.
Do you feel there is a clear career path for new entrants in the industry? In certain fields yes but it is a hugely diverse sector so skills can cross over a lot.
Is the industry taken seriously enough by the Government as a job creator? With the national events on the horizon I think they will.
