In 2002, the lowest-paid waiting and catering staff were plate waiters, bar persons and kitchen porters.

London-based silver service waiters, bar persons and kitchen porters have seen the largest fall in salary levels. In the rest of the UK this is not the case, with the salaries of butlers and head waiters suffering the most.
