Deep in the countryside in South-west France lies a contemporary glass and steel structure high on the Laguiole hills. Inside works a man, Michel Bras, who is creating stunning modern French cuisine that has been captured between the pages of his new book. The three-Michelin-star chef's book is, sadly, never going to compete with the sales of our own UK celebrity chefs, yet this is a breath of fresh air to inspire cooks and professionals alike. Beautiful photography leads you into his art and conveys his raison d'Áªtre. Step-by-step instructions introduce you to dishes such as pressed foie gras held between crisp potato, apricot and white bean, which are seemingly simple but in reality require precise timing and are subtly complex. Quite simply, this is an inspiring and beautiful book for any serious foodies and well worth the frustration of translating recipes. After reading this I reached for my map of France and calculated the driving time from Calais to Laguiole at eight to nine hours. Now, can I make it there on my day off? Marc Wilkinson, head chef, Latymer restaurant, Pennyhill Park, Bagshot, Surrey. Bras Á¢Â€Â" Michel Bras. Rouergue Á‚£60. ISBN 2-84156-350-2
