Burton-Race takes job as consultant

John Burton-Race has taken on a new venture as consultant chef for the Red House restaurant, which opened last week.

Burton-Race devised the menus for the 75-seat restaurant in Marsh Benham, Berkshire, owned by local businessman Timothy Gwyn-Jones.

The Red House has 10 staff, seven of which have worked with Burton-Race at his two-Michelin-star restaurant L'Ortolan in Shinfield, Berkshire. Restaurant manager Xavier Le Bellego and resident chef Rupert Rowley moved directly from L'Ortolan to the Red House. The other five trained there some years ago.

Burton-Race said: "This is not a mini L'Ortolan. It is a 16th-century coaching inn and what we are trying to do here is provide good, simple, clean food."
