Andy Chappell has held the post of managing director at ISS Facility Services Food & Hospitality in the UK since February 2011.

Deals clinched by the division this year include a four-year catering contract with Vanquis Bank worth around £1m. Others include an employee dining contract with London City Airport and a three-year staff catering contract at the H J Heinz head office.

It was also appointed joint caterer with Absolute Taste at Westfield Stratford City throughout London 2012 Olympic Games. Perhaps the biggest coup was to snag catering contracts at Barclays from rivals Compass Group and BaxterStorey as part of a new global deal with a value estimated to be in the hundreds of millions of pounds.

The company is part of ISS, which was founded in Denmark and is one of the world's largest facility services providers. Last year, the Western Europe region generated revenue of DKK39.3b.

Andy Chappell was promoted to managing director at ISS Facility Services Food & Hospitality in February 2011.

He joined the company as ISS Eaton's first UK director of operations in August 2008 at a time when the business and industry caterer had won several high-profile deals at computer manufacturer Hewlett Packard - and mobile phone network provider O2.

ISS was seeking to develop its operational strategy to take the company to the next level and Chappell's experience fitted the bill. Between 2006 and 2008 he had been group operations director for business dining at Aramark and between 1998 and 2006, he had worked as account manager at another heavyweight caterer, Compass.

He has a degree in leisure and tourism management from London Metropolitan University.

Chappell has adopted a number of more streamlined initiatives during recession. Auditing, for instance, is now done on a site-by-site basis every month. In his words: "This allows us to look at what they could have purchased more effectively."

Under his guidance, the company has also stepped up its use of intelligence from its electronic point of sale systems. This includes looking at exactly what the caterer is selling, what hour of the day they are selling it and therefore whether the right product is on offer.

This means Chappell and his team can understand its top 10 sellers, as well as the bottom 10, and engineer the menu accordingly. It also means that labour resources can be more cost-effectively rostered, part-time staffing can be introduced and so on.

Chappell has maneuvered the division through recession. This is borne out by the stream of high-profile contracts ISS has won. One of the biggest coups last year was sealing a 10-year deal to cater for 5,000 people working the White Rose Office Park in Leeds worth £1.5m a year.

Jonathan Doughty, managing director of food service consultancy Coverpoint, observed: "The significance of the Hub Building at the White Rose Office Park cannot be overstated. Our new food service partner, ISS, has mobilised to the very highest standard and the client team is delighted by the standards of operation already."

Chappell clearly has greater prizes in sight as he has recently beefed up the catering and restaurant management team with the appointment of Stephanie Hamilton as executive director of its UK operations.
