MCS's steam blitz

TO KEEP the flavour of food while cooking, take a leaf out the book of restaurateur, Alavaro Maccioni, owner of La Famiglia restaurant in Chelsea. He has purchased the revolutionary Steam'n'Hold oven from MCSTechnical Products.

There is no need to plumb in this Accutemp oven, which reduces the temperature at which steam is generated, via a revolutionary vacuum system. This means it can cook food at 100ºC like conventional ovens and also at temperatures as low as 70ºC.

"Prior to using Steam'n'Hold we had big pots everywhere. Now it's so easy" says Maccioni.
