Sous-vide range

A SELECTION of 19 chilled entrée dishes and four complete meals is available from sous-vide specialist Thomas Morel.

Ranging from Cassoulet of Duck, through Moules Mariniäre to Chicken Dijonnaise, the dishes are cooked to order to maximise freshness, and can be steamed, simmered or microwaved in their sealed packs. The portions, which come in packs of six or ten, work out at around £2.35 each.

Four seasonings

FOUR seasonings - Cajun, Chinese Five Spice, Garlic Chips and English Mustard Powder - have arrived on the market from Watson & Philip Foodservice, supported by exclusive recipes created by Jean Conil, president of the Epicurean World Master Chefs Society.

Available in shatter-proof PET containers with a resealable lid, the range is sold in single units of up to 500g jars to minimise costs for the small caterer.

Kid's stuff

FISH and potato dinosaurs and junior mini ribs are two children's dishes just launched by Bernard Matthews and Campbells, respectively.

Following on from the Turkey dinosaurs, Bernard Matthews' fish and potato versions come in 25g portions, 96 to a case, and can be frozen.

Junior mini rib, part of Campbells' Junior Wisebuy range, is a 2oz rib in two flavours, barbecue and tomato. There are 36 portions to the case.

Trout collection

SCOT Trout of Glasgow has launched a "convenient catering collection" of frozen trout fillets, boned trout, boneless supreme of large trout portions and boneless salmon coronets.

Sponge choices

FROZEN sponge cakes and doughnuts are on offer from Pullman Foods, ready-filled with jam and cream. Pullman's chocolate and vanilla sponges offer between four and six portions at 20.8p-13.9p per portion. They are available in cases of 12 sponges.

Pullman Select fresh cream doughnuts cost 21.8p to the caterer, come in 12 packs of six, and are filled with dairy cream, plus raspberry, plum or apple jam.
