FRANCES and Bill Atkins have opened a new restaurant in London called Shaw's, acting as chef and managing director respectively.

The couple have opened the 144-seat establishment on the site of Chanterelle in South Kensington, which they bought in January in partnership with four other investors including Tate & Lyle chairman and chief executive Neil Shaw.

Mrs Atkins made her name as a chef at the Old Plow at Spleen, Buckingham shire, which she and her husband ran for two years before opening the renowned country house hotel, Farleyer House, Perthshire, in 1988.

The move back to the South was prompted by the souring of a partnership between the Atkins and Derek Reid, now chief executive of the Scottish Tourist Board, and his wife Janice.

Mr Atkins left Farleyer House in May 1992, to be followed a year later by Mrs Atkins.

moazami assumes coburg post

MIKE Moazami is the new general manager of London's Coburg Hotel, following its purchase by Stakis last month.

He moves from the Wellesley Hotel in Croydon, Surrey, which he managed for about a year, after 12 years working for Holiday Inn in Europe and the USA.

Duncan Moir, formerly manager of the Coburg for Resort, takes over at the Royal Hotel at Scarborough, North Yorkshire, which is owned by Trust Hotels.

gelling moves up at castle inn

IAN Gelling has been promoted to executive manager at the Castle Inn Hotel near Keswick, Cumbria, in one of a series of managerial changes at the hotel.

The changes coincide with the redevelopment of the property, raising its total number of bedrooms from 36 to 50 and adding four conference rooms.

The new team includes Liz Arnell, joining as front of house manager, formerly duty manager at the Charnwood Hotel in Sheffield, and Linda Richardson, joining as sales manager from the Cumbrian Hotel, Carlisle, Cumbria, where she was front of house manager.

Joe Coburn, returning to the hotel after a brief absence, becomes food and beverage services manager, and Alan Skivington has been promoted from senior chef to food production manager.

rydstrom sets up training firm

CECILIA Rydstrîm, until recently general manager at the Elms Hotel in Abberley, near Worcester, has started her own company, specialising in housekeeping training.

Ms Rydstrîm's first job in the industry was executive housekeeper at the Savoy Hotel in London, and she went on to work at the Mandarin Oriental in Hong Kong and the Ritz in London.

She will run courses in reception and customer care, but believes there is a greater need in the industry for housekeeping training.

stapley heads up regional sales

MIKE Stapley has been appointed by Queens Moat Houses to head up its new regional sales office for the South-west, based at the Royal Crescent Hotel in Bath.

Mr Stapley was previously sales manager at the Swallow Hotel in Northampton, having held posts at various other Swallow hotels throughout the North-east of England.

Mike Ward to head chef from sous chef at the Stakis Kes wick Lodore Swiss Hotel, Cumbria, replacing Kurt Hart mann who retires this week.

Soimalee Romson to chef at the newly opened Thai on the River restaurant in London, from the Chiang Mai Kitchen restaurant in Oxford.

Jerry Murphy to airline and airport sales manager at the Ramada Hotel Heathrow, replacing Steve Stanford, now airline sales manager for Forte's Excelsior and Crest hotels at the airport.

Nick Jaques to director of sales at the London Gatwick Hilton, from account manager at British Airways.

Carolyn Moore to divisional manager of hotel services at Hogg Robinson Business Tra vel International, from area manager with the company.

Peter Fitzgerald to general marketing manager for reservations group Utell International, from marketing manager for the UK and Ireland. His previous role is being filled by Quentin Moores, from the Official Airlines Guide.

Elizabeth Holmes to conference network manager, at the Holiday Inn Crowne Plaza, Manchester, from the hotel's conference co-ordinator.

OBITUARIES: JOHN BELFIELD-SMITH

JOHN Belfield-Smith, joint founder of the Greene Bel field-Smith consultancy, and fellow of the HCIMA, has died aged 64.

Mr Belfield-Smith moved into consultancy when he bought the first independent food service consultancy, the Henry Smith Organisation, in the early 1960s.

Ten years later with Mel vyn Greene he founded the largest consultancy to the catering and hotel industry in its time. Mr Belfield-Smith went independent again in the 1980s, remaining active in the industry until his death.

CLIVE OSBORNE

CLIVE Osborne, secretary to the Master Chefs of Great Britain, has died aged 71.

Mr Osborne helped set up the association's UK branch in 1979, sponsored by his employer, the Carte Blanche credit card company. He remained secretary until his death.
