Claude and Cedric Bosi to open Surrey pub
Brothers Claude and Cedric Bosi are set to open a new pub in Esher in Surrey.
The Swan Inn will launch on 20 May this year. The site, which dates back to 1905, will open at 2 Hare Lane and will offer "English food from a Frenchman".
Two-Michelin-starred chef Claude will oversee the menu with head chef Justin West.
The manager will be Joseph Hendriks, who has worked at Claude's London restaurant Hibiscus, and at Claude and Cedric's previous west London pub, the Fox & Grapes in
Wimbledon Village.
Typical dishes will include Crab on toast with spring leaf salad and mustard dressing; Lyonnaise salad with poached eggs, organic bacon and crispy croûtons; rump of Welsh spring lamb with Moroccan mint pesto; skate wing with beurre blanc, Jersey Royals and spring greens; the Swan burger; treacle tart with clotted cream; and rhubarb jelly and custard with Scottish shortbread.
A traditional Sunday roast will also be on offer throughout the day.
The pub, which has a 55-cover restaurant, will have a modern, updated interior, but will retain many of the traditional touches of the pub, including its fireplaces and high ceilings.
There will also be a private dining room on the first floor to accommodate up to 14, and outdoor seating, half of which is fully covered, for up to 100, with seasonal heaters and umbrellas.
There will also be six guestrooms, open from late June, and ranging from £60-£100 per room, including VAT.
In addition to the Swan Inn, Cedric, also owns the Charlton Arms in Ludlow, Shropshire, as well as the boutique Townhouse hotel, also in Ludlow.
