Ducasse to open Paris bistro

Michelin-starred chef Alain Ducasse is taking over a humble Paris bistro specialising in the regional cooking of Lyon.

Ducasse, normally associated with luxury restaurants, claims to have bought the Aux Lyonnais bistro as part of a strategy to "demonstrate that culinary excellence is not confined to the world of luxury" and that "rigour and quality are not at odds with simplicity."

The new restaurant is expected to open in October and will, according to Ducasse's company, offer food at "reasonable prices" using regionally grown produce.
