Already popular on the Continent and now making its UK debut is the Pollux egg pasteurising machine. It uses a combination of ultrasound technology and mild heat treatment to pasteurise up to 60 eggs at a time, destroying bacterial food infections including salmonella and E coli 0157. Using the same process, the machine is also capable of boiling eggs to exact specification, including hard- and soft-boiled. A sister machine, the Castor Egg Holding Unit, will hold 30 soft- or medium-boiled eggs for a maximum of four hours.
