Question

I have been in catering for 12 years and I wish to move on from cooking. I am stuck in a rut and wish to start a new career. I would like to train as a trainee manager in a restaurant, hotel or pub. Can you tell me which training courses and qualifications I would need to get started? I have been a kitchen manager of a small school kitchen before, but this did not require qualifications.

If you have drive, enthusiasm and determination, there are many catering organisations that offer training. Many of the larger hotel and pub companies have in-house training programmes which are recognised by the rest of the industry, so you could try to get work with one of these. Alternatively, you could find out if a company would support you in doing a NEBS diploma in management or an NVQ management qualification. There are both distance learning courses and evening courses in management.
