Flavoured couscous – just because-cause

Couscous is gradually moving beyond Middle Eastern cooking and appearing as part of an eclectic menu mix. While, traditionally, extra flavourings were added after reconstituting the grains, it is now possible to get pre-flavoured grains, and Universe Foodservice has launched the Sammy's brand of flavoured couscous in seven varieties. These are Sun-Dried Tomato with Mediterranean Herbs, Wild Mushroom, Garlic and Herbs, Moroccan Spice, Indian Spice, Italian Pesto, French Provencale and Cous-Cous Salad. All the varieties are high-fibre, low-fat and suitable for serving to vegetarians. They come in 1.5kg plastic jars, packed six to a case, with one jar capable of producing 30 portions.
