Goodway has star quality, says boss
Michelin-starred Yorkshire restaurant the Box Tree has appointed SHANE GOODWAY as its head chef.
Goodway previously worked with Alain Passard at the three-Michelin-starred L'Arpège restaurant in Paris. He has replaced Toby Hill, who left on New Year's Eve to join the Lords of the Manor hotel in Upper Slaughter, Gloucestershire.
Goodway, former chef de partie at L'Arpège, has brought Tristan Welsh as sous chef to the Box Tree, in Ilkley. Welsh was formerly chef courant at L'Arpège.
Goodway and Welsh, aged 26 and 22 respectively, are the only chefs at the 35-seat Box Tree. They took over when it reopened on 15 January after a two-week closure.
Welsh has replaced Richard Grandis, who left on Boxing Day and moved to France.
Goodway has worked in a series of Michelin-starred restaurants, including Gidleigh Park in Chagford, Devon, and the Waterside Inn in Bray, Berkshire.
Helen-Lela Avis, managing director of the Box Tree, said he was one of the most exciting young chefs she had come across, capable of building on the Michelin star the restaurant already holds.
Goodway said: "I want to settle here, cook good food with local produce, and I want all my training to come out."
Welsh has worked at London restaurants City Rhodes, Aubergine and Le Gavroche, and was winner of the Academy of Culinary Arts Award of Excellence in 2000.
