Looking at it from a novice's point of view, rather than a chef's, I think *Gordon Ramsay's Just Desserts* has succeeded in laying out the basic principles for creating great desserts. Ramsay starts with simple coulis and sauces and slowly builds a stronger foundation with each chapter. The recipes are are uncomplicated, yet sound and pure. I like it that he only nudges people in the direction of more difficult desserts towards the end. It is as if he is saying, "Here are the techniques; now see what you can do with them." He deconstructs daunting and sophisticated desserts so that the novice cook can put it all together afterwards. After reading the book in its entirety, I think he is successful in appealing to audiences of different abilities - he gives them a little bit of everything. I also came away with the impression that if you have access to great ingredients and a solid background in different techniques, creating delicious desserts is easy. Which is exactly what I think he wanted to convey to his readers.
