Cacao Barry's Ganache … la Carte from Barry Callebaut is a new prepared ganache containing dairy cream and a bitter dark chocolate. Designed for all chocolate desserts and pralines, to be used as, say, a filling, for piping decorations, or as a base to a chocolate mousse, the ganache can be heated in a microwave or bain-marie (to a maximum of 35¡C). Each case contains 2 x 2.5kg aseptic pouches, which keep the product fresh for one year at room temperature before opening.
