The importance of good food hygiene practice was highlighted by the running of the Identiboard Trophy competition at all Hotelympia's live cookery classes.

The judges, led by Geoff Ward, environmental health officer and managing director of environmental health consultancy HMS in Bath, monitored the participants for their consideration of hygienic food preparation. Trophies, sponsored by Cres Cor, manufacturer of mobile banqueting and food service equipment, were awarded to the best senior chef, junior chef, student chef and team during Hotelympia, with gold medals being presented to all individuals and teams scoring more than 90%.

The Senior Identiboard Trophy went to Martin O'Rourke of the Defence Forces School of Catering, Dublin, with the junior trophy being presented to Gareth Boorman from the Isle of Man College. The student trophy was won by the Northern Ireland Catering College team of Michael Gillis, Sylvia Jones and Richard Taylor, while Gardner Merchant scooped the team award.
