Maxime Le Van is new head chef at London's Paradise By Way of Kensal Green gastropub
Maxime Le Van has replaced Tim Payne as head chef of the Paradise By Way of Kensal Green gastropub in London.
Le Van, originally from Nice, has worked for five years at Club Gascon, two of which he spent as head chef working directly under Pascal Aussignac.
He also spent seven months working in the kitchen during the London launch of L'Atelier de Joel Robuchon in London.
