My bigger ambition

Question

I'm the young man with the big ambition in your Ask the Expert article "I'm going to be a top chef". I have just finished my first year at my college and got a good mark. My workplace has won an award for the best restaurant of the year. I enjoy working there as I learn more every day and take on more responsibilities. I still have an ambition to be one of the best chefs in Scotland, but I now want to think about running front of house as well, after I have achieved my first ambition.

What path should I take now? I want to finish my degree in culinary arts and maybe even move on to do the HCIMA certificate. Which management course would be best for learning about the front of house side of things?

I think the HCIMA certificate is certainly a good course to pursue. It will give an all-round grounding in management to a fairly high theoretical and practical level. Part of the course normally contains a one-year placement, so this would provide the opportunity to gain practical front-of-house knowledge and experience. Â
