Opening the door for pressure bratt pans
THE entry of Ambach into the specialist field of pressure bratt pans could attract more chefs to this highly versatile form of volume cooking. Priced from £11,000 - a considerable reduction on prices of Swiss-made models - the new Italian-made units combine the inherent versatility of the bratt pan with pressurised operation for rapid cooking with minimal use of energy.
Trevor Burke of Mareno UK believes that the pan will offer a viable alternative to a combi-steamer replacing one of the combis in an application which would normally use two combis, thanks to the pressure bratt pan's ability to deal with shallow frying, griddling and searing.
So far, two models of the tilting pans are available: 2 x 1/1 Gastronorm pan capacity and 3 x 1/1, providing 135 and 155 litres capacity respectively at £11,000 and £13,000. Both have powered tilting.
Also new from Mareno is a Maxi oven designed specifically for the UK market with a cavernous 975mm wide x 645mm deep x 400cm high capacity sufficient for an entire lamb.
