Pitt to run kitchen at Hustyns hotel
A chef who has worked in London for 10 years is about to open the second restaurant of a new luxury hotel that opened in Cornwall four months ago and is still under construction.
Before moving to the Hustyns hotel, near Wadebridge in north Cornwall, Steve Pitt was head chef at the Tate Modern gallery and had also worked at Harvey Nichols' Fifth Floor and Oxo Tower restaurants, Quaglino's, Champneys and Barclays Bank.
As executive head chef, Pitt will oversee both the hotel's existing 60-seat fine-dining restaurant, which is aiming for three rosettes, and the 60- to 70-seat brasserie which opens at the end of August. He is also responsible for private dining and events.
In time, guests at the hotel's luxury lodges will also be able to book a chef to cook for them individually in their own kitchen. And, having lured Cornwall's premier pastry chef, Sarah Blewett, from Pennypots restaurant in Falmouth, Pitt is also looking to supply breads and baked goods to other restaurants, shops and delicatessens.
The hotel, owned by Terry Matthews, founder of the St Merryn Food Group, covers 187 acres of land at St Breock Downs and aspires to a four- or five-star rating.
