Toque d'Or is all set for January take-off

Visitors to Hospitality Week 99 at the NEC Birmingham in January will see teams of student chefs rising to a new challenge for the 1999 Nestlé Toque d'Or competition.

In the new-format Toque d'Or, 28 teams of three, selected from a paper judging, will compete live on the Nestlé stand. Students are required to create a name and theme for an eating venue, and an appropriate menu.

Prior to Hospitality Week, the teams will be adopted by one of four company mentors - Sutcliffe, Gardner Merchant, Aramark and Compass - to prepare their concept and menu.

The aim is to reflect the trend towards casual dining and encourage creativity, teamwork and business skills in addition to culinary ability.

The menus must consist of a main course, a hot or cold coffee beverage and a dessert at a cost of £8 per head. Four teams will go forward to the final, to be held in London in March.
