Welsh team gets a royal chance

The Welsh National Culinary Team got the royal seal of approval this week when it prepared a state banquet for the Queen on Monday.

The banquet, in honour of visiting heads of state from across the EU, was held at Cardiff Castle. It marks the second time in weeks that the team has cooked a feast fit for a king - at the end of May it catered for the Emperor of Japan.

As well as Peter Jackson, head chef and general manager at the Maes-y-Neuadd Hotel, North Wales, the team includes Trefor Jones, executive chef, Celtic Manor, Newport; Graham Tinsley, group executive chef, St David's Hotel, North Wales; Colin Gray, owner, Baron's Patisserie, Cardiff; Sarah Duggan, lecturer, University of Wales Institute, Cardiff; Lee Jaynes, chef, Wray Castle, Cumbria; and Nigel Godwin, Cwrt Bleddwyn, Usk, South Wales.
