Apple pie order

A buffet pork and apple pie has been added to the speciality range from Peter Hunt's Bakery Foods.

The pie, which weighs 76g, has a layer of diced Bramley apple on top of a pork filling. Supplied frozen and packed 60 to a case, the pies require baking for 18-20 minutes at gas mark 6, 200ºC.

One lump or two?

Wrapped lumps of rough-cut pure cane sugar have been introduced on to the UK catering market by food importers Ivory & Ledoux.

The sugar lumps are aimed at establishments serving speciality coffees and are available in cartons, which can be turned into counter-top dispensers, containing 500 brown or white lumps.

Peas release me

The New Covent Soup Company has added two soup varieties to its summer catering range.

The two soups, which the company recommends serving chilled, are: green pea and lettuce; and tomato and basil vichyssoise.

Both varieties are available in two-litre cartons packed four to a box, have a chilled shelf life of 10 days and can be frozen.

Moroccan lamb tagine

Jugg Foods' new Moroccan dish, lamb and apricot tagine, consists of pieces of lamb, celery, peppers, aubergines and dried apricots, flavoured with herbs and spices, orange and lemon zest and honey.

The company recommends serving the recipe, which comes frozen in 8 x 12oz single portions, with couscous, plain rice or warm pitta bread.
