Young's to open London cocktail and toastie bar WM Barker & Co
WM Barker & Co, a new subterranean bar and restaurant lounge in London's Bishopsgate from pub company Young's, is to open this week.
Named after the original owner of the building, the bar will specialise in ‘shrub' cocktails and also offer toasties, local London craft beers, artisan coffees, and cheese and charcuterie boards.
A mixology team with cocktail consultant Salts of the Earth, from Brixton cocktail bar Shrub & Shutter, will create a cocktail list based on sweet or sour syrups, called shrubs, which are said to add a depth of flavour to a drink.
Each cocktail has been designed to represent a different area of London, including Canary Wharf (vodka, Kahlua, caramel shrub and espresso), Shoreditch (gin, parma violet shrub and espresso), and Hoxton (gin, apricot liqueur, pomegranate shrub and a shortbread crumble rim).
There will also be made-to-order toasties, including the Brinner (egg, Cumberland sausage and Cheddar), the Mac ‘n' Cheese (with chorizo pate and caramelised onion), and the Five Cheese Ooze (five cheeses plus spring onions).
The menu will also feature open sandwiches and daily changing soups, while the charcuterie and cheese boards will be served until 11pm Monday to Wednesday, and until 1am Thursday to Saturday.
Coffee will include classic options plus cold brews infused in fresh water for 24 hours. There will also be the Will's Early Riser, a ‘bulletproof-style' coffee (coffee with butter), alongside fresh juices and matcha green tea.
The décor will feature high-backed leather stools, and there will also be all-day music that will get louder in the evenings.
