Marcus Wareing, sacked from his job as head chef at London’s L’Oranger restaurant in July, is to open his own restaurant in the same street as his former place of work.
The new restaurant, which has financial backing from Wareing’s former boss Gordon Ramsay, is located on the site of the former 33 St James’s Street restaurant. It is due to open in mid-November.
Called Pétrus, after the famous Bordeaux wine, Wareing’s new eaterie will seat 50 and offer an à la carte menu with spend per head of around £30-£35 for a three-course meal.
Wareing anticipates that the restaurant will carry a list of up to 300 wines and says it will be the first in London to have a separate wine list of 20-30 Château Pétrus bins.
Wareing, who will be a shareholder in the enterprise, expects to head a kitchen brigade of 12 chefs several of whom are from his previous brigade at L’Oranger. by Jenny Webster
