NEWMAN-HALL takes the helm at VOYAGER hotels
PHILIP Newman-Hall is the new general manager of Voyager Hotels, part of Richard Branson’s Virgin Hotels Group.
Mr Newman-Hall will be responsible for Voyager’s three company-owned and four managed hotels in the UK, including the three Welsh properties whose management contracts it was awarded last month by Welsh Water (Caterer, 10 March).
He takes up the position after four years managing Voyager-owned Crathorne Hall in North Yorkshire.
Replacing him there is Julian Ayers, former deputy manager of the Gosforth Park hotel in Newcastle.
Mr Newman-Hall told Caterer he wanted to establish a degree of standardisation within the group, while striving to preserve the hotels’ individuality.
KEMMERY JOINS PALL MALL
SUE Kemmery has joined Pall Mall Services Group, which incorporates Pall Mall Catering, as director of human resources.
Ms Kemmery previously spent 14 years in the personnel department at Compass Services, with the past three years spent as personnel director for the north of England.
She will be responsible for a staff of 10,000 at Pall Mall, where the catering section produces 12 million meals each year.
P&O RECRUITS MONAHAN
MICHAEL Monahan is to start as executive chef for the P&O Cruises fleet next month, supervising a team of five head chefs from a Southampton base.
Mr Monahan was previously executive chef at the Penina Golf Resort in the Algarve, and at the Diplomat Hotel in Bahrain prior to that.
The Canberra and the Sea Princess presently make up the fleet, and a new liner is due to be completed next year, bringing the total capacity to more than 4,000 passengers.
FROM CANTEEN TO COUNTRY HOUSE
JONATHAN Nicholson has been promoted to the post of head chef at Congham Hall country house hotel near King’s Lynn in Norfolk.
Mr Nicholson was previously sous chef for a year at the hotel. Prior to that he spent a year working at Marco Pierre White’s The Canteen in London.
His experience also includes working under Mr White at Harveys restaurant in London and three years at Michelin-starred Le Talbooth hotel and restaurant in Dedham, Essex.
Mr Nicholson takes over from Murray Chapman who moves to the Royal Oak at Yattenden, Berkshire, after five years at Congham Hall.

Andrew Silver to commercial sales manager at Swallow Hotels’ head office in Tyne and Wear, a promotion from international reservations manager. He replaces Tim Walsh, moving to the Swallow Royal Hotel in Bristol as business development manager.
Andrew Burnet to sales and marketing manager at Thainstone House Hotel & Country Club, near Inverurie, Grampian, from a similar position at Scott’s Hotels’ UK head office.
Rowland Parry to conference and banqueting manager at the newly opened Ashdown Park Hotel, Wych Cross, East Sussex, from banqueting head waiter at the hotel.
Alan Cutler to head chef from sous chef at the Dormy House Hotel, Broadway, Hereford & Worcester, taking over from John Sanderson, who joins Salterns Hotel, Poole, Dorset, as general manager and executive chef.
Lesley Simpson to sales and marketing manager for London Catering Services, moving from sales office manager for the Richmond Hill Hotel in Surrey, where Jackie Andrew has been promoted to replace her.

Former chairman and founder of the Taylor Freezer equipment company, RonAppleby, has died at the age of 68. He founded the company 22 years ago after working in the catering supplies industry.
