Nathan Outlaw to open London restaurant at the Capital hotel

Cornwall chef Nathan Outlaw is set to come to London, with the opening of a seafood restaurant at the Capital hotel.

The two-Michelin-starred chef, who runs his eponymous restaurant as well as the Seafood & Grill at the St Enodoc Hotel in Rock, will launch Outlaw's Seafood & Grill at the Knightsbridge hotel on 2 October.

"I'm really excited about opening a restaurant in London and I think there's a big gap in the market for a simple seafood restaurant," Outlaw said.

"The feedback we've had from our diners over the last while is that fine dining is not what customers want any more and also with a fine dining restaurant you have to be in your kitchen 100%, which I won't be."

Outlaw will divide his time between Cornwall and London, spending one or two days a week at the Capital. Head chef Pete Biggs, who has worked with Outlaw for a decade, will oversee the London kitchen.

Outlaw's venture will be located in the hotel's restaurant, which previously held two Michelin stars under Eric Chavot. The space will close for a few weeks in September and undergo a refurbishment to make it less formal.

"We'll lose the white tablecloths and will have wooden tables and the whole interior will be made to look a bit more casual," Outlaw explained.

"We're also refitting the kitchen a bit and will be installing a Josper and a charcoal grill, which are so important in the kind of cooking that we do."

The menu will showcase fish and seafood from across the UK, but around 85% will come from Cornwall, with typical dishes such as Cornish crab on toast, grilled lemon sole with potted brown shrimp butter, roast brill on the bone and whole Port Isaac lobster. A set lunch menu will also be offered.
