Shay Cooper is named as the new executive chef of London's Goring hotel

Shay Cooper, currently executive chef at the Bingham hotel in Richmond, Surrey, is to join the Goring hotel in London as executive chef in October.

He will replace Derek Quelch, who left the five-red-AA-star, 69-bedroom hotel in March after 15 years at the property.

A spokesperson for the Goring said: "Everyone at the hotel is very excited at the appointment and looks forward to working with Shay."

Cooper also voiced his excitement about the move, saying that he was looking forward to doing a really good job for the Goring, which earlier this year became the first hotel to be awarded a Royal Warrant by the Queen.

"I very much intend to retain the core values of the Goring, but I also hope to move the food forward," he added.

Cooper has been at the Bingham since 2007 and has since made a name for himself and the riverside boutique hotel for his contemporary take on classic cuisine. He was awarded the Hotel Chef of the Year (under 250 covers) award at the Hotel Cateys in 2010 and held a Michelin star for two years in 2010 and 2011.

Originally from Cheshire, Cooper started his career at Paul Heathcote's School of Excellence, in Manchester, in 1997.

He went on to work at a number of Michelin-starred restaurants, including Putney Bridge in London; Juniper in Altrincham, Cheshire; and the Vineyard at Stockcross, under the then executive chef John Campbell.

Prior to arriving at the Bingham, Cooper was head chef at the Hotel Endsleigh in Devon, owned by Olga Polizzi, where the restaurant was awarded three AA rosettes.

Cooper is to be replaced at the Bingham by Mark Jarvis, currently head chef at the Blueprint Café, owned by D&D London.

Quelch is currently working as a consultant chef and for the University of West London.
