Restaurant group D&D London has seen its group rating from the Sustainable Restaurant Association (SRA) upgraded to three stars – the highest possible.

The company, which is a founder member of the SRA, has achieved the accolade thanks to a range of measures, including taking the electricity for its restaurants from 100% sustainable sources, and an ambitious chef apprenticeship scheme.

D&D London managing director, David Loewi, said: “It was a key sustainability objective to accomplish the highest possible SRA group rating this year and we’re so proud that’s we’ve been able to achieve the three stars. As a company, we have always strongly supported the SRA, and our chefs and purchasing team have built brilliant relationships with our suppliers to ensure we are receiving the best quality, seasonal produce from trusted, sustainable sources.”

D&D London purchasing director, Paul Jenkins, added: “As a founder member of the SRA we’ve long believed sustainability is a vitally important issue – not just for D&D London but for the restaurant and hotel industry as a whole. We are thrilled to have been awarded the SRA’s three star sustainability rating – this is testament to the hard work our teams have put in to make our business more sustainable. It has been fascinating to see the sustainability movement evolve to the extent where it now makes commercial (as well as ethical) sense to choose the sustainable option. For example, in 2014 all of our electricity has and will come from 100% renewable sources and at no premium over traditional electricity generation, whilst 60,000 litres of our used cooking oil has been converted into biodiesel saving 156,000kg of CO2.”

The company’s apprenticeship scheme involves a full-time, paid training programme offering up to eleven apprentices each year professional work experience in a D&D restaurant kitchen, a formal qualification from the University of West London and a career with D&D at the end of the two-year course.
