Rosewood appoints Amandine Chaignot as executive chef
The Rosewood London has made French chef Amandine Chaignot its new executive chef.
Chaignot who studied a postgraduate degree in pharmaceutical studies before realising her interests lay in cooking, takes over from the middle of this month.
She will oversee the kitchens and menus throughout the hotel, with particular emphasis on the Mirror Room.
The 35-year-old chef describes her cooking style "fresh, generous and real" while respecting the great traditions of French cuisine.
Trained at the professional culinary school École Grégoire-Ferrandi in France, she has worked alongside several great French chefs including at Hôtel Plaza Athénée with Alain Ducasse and Jean-François Piège (2001-04), Le Bristol with Eric Frechon (2004-2007), Le Meurice with Yannick Alléno and Philippe Mille (2008-2010), and second to Christopher Hache at Hôtel de Crillon (2010-2012).
Most recently, she was executive chef at the renowned Hôtel Raphael, Paris (2012-2014).
Matthias Roeke, regional vice-president and managing director of Rosewood London, said: "I am thrilled to welcome Amandine to the Rosewood London team - she brings with her a wealth of world class experience, an enthusiastic personality and unrivalled determination."
Chaignot said: "I am both proud and excited to join the Rosewood London team. There is a great, positive energy within the hotel and I strongly believe that London is one of the world's most exciting culinary destinations."
She takes over from Bjorn van der Horst who was director of food beverage and kitchens, who left in September last year.
