Bingham team supports 2nd Chance pop-up
The Bingham general manager Erick Kervaon has partnered with chef de partie Mike Nyotu to lead a team of trainees in the running of a pop-up restaurant for training course 2nd Chance.
The Secret Kitchen restaurant will operate out of the students' college kitchen from 9-12 February, with Nyotu acting as head chef and Kervaon overseeing the operation.
The trainees will work in teams in four main areas: front of house, back of house, branding and promotion, and interior design.
As part of efforts to develop the employability skills of the trainees, they will each have to apply for specific roles and go through a typical interview process.
Diners will not be charged, but instead asked to donate an amount they feel is suitable to the dining experience they received. The cash raised will go towards the students' forthcoming graduation ceremony.
In the run-up to the Secret Kitchen, the trainees have joined the Bingham in groups to do training in the kitchen, the restaurant and in marketing, so as to learn how to run their pop-up restaurant.
2nd Chance is an ‘education to employment' training course created to support unemployed 18 to 24-year olds on their journey to a career. They are offered a six-month career preparation course that gives them the opportunity to gain experience, skills and qualifications required for employment and apprenticeship opportunities.
