ETM Group to launch first pub outside London
ETM Group is to launch its first pub outside of London, when it opens the Six Bells near Lavenham in Suffolk in April this year.
The new site will be the 14th for the privately owned gastropub group and involves an extensive refurbishment of the Grade II-listed building in the village of Preston St Mary, Sudbury, located three miles north of Lavenham and 20 minutes from Bury St Edmunds.
The pub was once how to a brewery and dates back to 1416. The 2,000 sq ft venue will offer a 20-cover bar and a 40-cover dining room that can be split to function as a private events space.
Head chef John Tremayne is moving from his position of head chef at ETM's White Swan pub on Fetter Lane to head up the new venture, with a focus on careful sourcing from local farms and niche suppliers including nearby Lavenham Butchers and day-boat fish from Leigh-on-Sea.
Open from midday, seven days a week, the Six Bells will focus on country pub fare, an extensive wine list, and a beer selection voted for by Preston St Mary locals including monthly guest ales. Average spend per head for a three-course meal with wine is expected to be £25.
