Vietnamese fast casual concept Hop to launch in London
A new fast casual Vietnamese restaurant concept is set to open in London's Broadgate in June 2015.
Hop will aim to bring Vietnamese "com binh dan" or "working people food" to the capital, offering boxes of food on the go from its site at 2 Finsbury Avenue Square.
The dishes on offer will range from pho (Vietnamese noodle soup) to bánh mì (bread-based rolls and sandwiches) and bun noodle salads.
Hop is the brainchild of 31-year-old former City worker Paul Hopper, who travelled extensively across Vietnam in 2012.
Hop, which means "box" in Vietnamese will offer food influenced by cooking styles from across the whole of Vietnam, and will rarely use wheat, dairy or gluten.
It will be open for breakfast with a selection of breakfast bánh mì and congee (or Vietnamese porridge), as well as snack pots of sticky rice, jerky and greens. It will also serve coffee.
Typical lunch options will include: Five spice pork hot meal box (£6.75); beef pho (£6.25); pork pate and pork belly bánh mì (£4.95).
