Sid Clark named operations director at 28°-50°

Sid Clark has been named operations director at 28°-50° Restaurant Group a week after the surprise departure of co-founder Xavier Rousset from the business.

In a statement the Texture and 28°-50° restaurant group said Rousset would leave with "immediate effect" and that a director of operations would be appointed in due course. Rousset later told The Caterer that his decision to leave the restaurant business had been in the pipeline for some time.

Clark assumes the operations director role from Maze and Maze Grill by Gordon Ramsay, where he was general manager for five years. His new position will see him take overall responsibility for developing further 28°-50° operational capability.

Commenting on the appointment, Clark said: "I am delighted to be appointed as the new 28°-50° operations director and I am thrilled to be joining such a dynamic restaurant group."

Agnar Sverrisson, director and co-founder, added: "I am pleased to welcome Sid Clark to 28°-50°. Sid is highly experienced and we are delighted to have him on board. He brings with him a wealth of knowledge and his extensive experience will certainly add strength and depth to our senior management team."

Rousset exited the Texture and 28°-50° restaurant group he established with Sverrisson in 2007 last week. The restaurateur and award-winning wine expert has retained a small shareholding in the business, but will no longer be involved on an operational level.
