Albert Roux to open Roux on the Green at Roxburghe hotel Kelso
Legendary French chef Albert Roux is to open a new restaurant in Scotland, on the '19th hole' of the golf course at Kelso hotel the Roxburghe.
Roux on the Green will open for summer, and offer a more relaxed menu than the existing Chez Roux restaurant already found within the main hotel, according to http://www.heraldscotland.com/news/home-news/albert-roux-tees-up-new-restaurant-to-add-to-his-empire.127673938" target="_blank" rel="noreferrer">The Herald Scotland.
Head chef will be Scottish-born and trained Lee Pattie, who will oversee both Roux restaurants at the property, and source local ingredients as much as possible.
Pattie has previously worked at Michelin-starred restaurants including De Karmeliet in Bruges, and at the Roux family's two-Michelin starred Le Gavroche in London. He also helped win two AA rosettes for the Chez Roux restaurant at Inver Lodge hotel.
The Chez Roux concept is already in place in a number of Scotland hotels, such as Andy Murray's Cromlix House, and Inverlochy Castle.
Commenting on the new opening, Albert Roux said: "Chez Roux on the Green gives us an opportunity to enhance the quality experience offered by the region's championship golf course and award-winning hotel. Having already established a fine-dining presence with Chez Roux in the hotel, I look forward to launching the new restaurant at the clubhouse."
Managed by Inverlochy Castle Management International (ICMI), the Roxburghe hotel is part of the estate owned by Sir Guy David Innes Ker, the 10th Duke of Roxburghe.
