Francesco Dibenedetto appointed head chef at Hibiscus

Francesco Dibenedetto has been appointed head chef at Hibiscus, Claude Bosi's two-Michelin-starred restaurant in London's Mayfair. It is his first head chef role.

Dibenedetto will take over from Ian Scaramuzza, who has been promoted to development chef. It is understood Scaramuzza will be working on new, as yet unannounced projects with Bosi. Scaramuzza won the prestigious Roux Scholarship this year.

Dibenedetto brings almost 20 years' restaurant experience to the position, having worked as consultant chef at the Chez Roux group; sous chef at Le Gavroche from 2009 to 2012 (having been demi chef de partie from 2005 to 2007); and chef de partie at Joel Robuchon's La Table de Monte Carlo from 2007 to 2009.

He was also chef de partie and junior sous at the Four Seasons Golf Club in Dubai, and was an official member of the Italian National Culinary Team, having trained at Italy's Professional Institute for State Food and Wine, and in hotels across the country.

Dibenedetto has also undertaken stages in kitchens such as Grant Achatz's three-Michelin-starred Alinea in Chicago, the now-closed two-Michelin-starred Charlie Trotter's, also in Chicago, and Richard Ekkebus' two-Michelin-starred Amber in Hong Kong. He also spent time at Gordon Ramsay's three-Michelin-starred Royal Hospital Road in London.

Hibiscus originally opened in Ludlow, but relocated to London in 2007. It was redesigned and renovated in 2014.
