Michel Roux to open restaurant in Switzerland

Michel Roux is to open a new restaurant in Crans-Montana, the ski resort in the Swiss Alps where he has lived for the past 10 years.

Roux, who has just celebrated the 30th anniversary of three-Michelin-stars at the Waterside Inn in Bray, where his son Alain now heads the kitchen, said he is "very excited" about the new project.

"I won't be involved in running the restaurant," he explained. "But I will often be there at lunch and dinner and I am looking forward to see many of my former protégés being involved."

Stéphane Colliet will be head chef. She was sous chef at the Waterside Inn for five years and is currently head chef at La Maison 1888, the restaurant Roux opened at InterContinental Danang Sun Peninsula Resort, Vietnam, in 2012. A restaurant manager is yet to be appointed.

The restaurant, which aims to operates at Bib Gourmand/one Michelin star level, will serve French food with Mediterranean influences. Roux also hopes it will serve "proper English breakfasts" from 8am.

Featuring 50 seats in the main restaurant, it also has space for an additional 30 covers at the bar, 30 on the terrace (open both in summer and winter) and 25 in the cellar where fondues and raclettes will be served.

"The restaurant is set in a beautiful, chic location, overlooking the Crans-Sur-Sierre golf course, with Hermes and Yves Saint Laurent boutiques nearby," said Roux.
Featuring an open kitchen, it is set to be refurbished in "a very Swiss style" with lots of wood. "It will be very relaxed and comfortable; it won't be ostentatious."

Roux now lives for around five months a year in Switzerland, visits the UK for two to three months, and spends the rest of the year travelling.
