Terry Laybourne to open Asian restaurant in Newcastle Fenwick store
Chef-restaurateur Terry Laybourne has revealed plans to team up with one of his head chefs to open a new Asian restaurant in Newcastle.
Dubbed Ko Sai, the restaurant will be Laybourne's second operation within the food hall of department store Fenwick, after Saltwater & Co, a fish bar and fishmonger that was announced last week.
Laybourne has acted as a consultant to Fenwick, helping advise on the overall multi-million pound food hall redevelopment.
Ko Sai is a joint venture between Laybourne and Thai-born head chef Parichat Somsri-Kirby, who has worked at Café 21 Fenwick since it opened in 2006.
The noodle-bar will offer fast, casual dining at a 40-seat counter bar. It will feature ingredients and influences from Cambodia, China, Vietnam, Thailand and Korea. Dishes will include soup noodles, stir fries and curries, steamed buns and fresh Thai and Vietnamese style salads.
The drinks list will feature wine, fresh juice and craft beer, including Ko Sai, a house beer that is being developed in conjunction with Wylam Brewery.
Elsewhere within the Fenwick food hall, a selection of Ko Sai dishes will be available to take away from the Delicatessen counter.
