Hedone to reopen without a menu after revamp
Chiswick restaurant Hedone, from chef Mikael Jonsson, is to close for 10 days from 10 October, before reopening with a revamped set of dishes and no conventional menu.
Diners will not be offered a conventional menu, but instead will be able to choose between two tasting menus, one of which will use more exclusive and rare ingredients. Prices have yet to be confirmed. There will also be a 400-strong wine list with a focus on little-known bottles and winemakers, and a number of small tweaks décor-wise, such as new furniture.
The restaurant will aim to deliver "an exciting and liberating customised experience", and will also only be open for Saturday lunch, and dinner Tuesday to Saturday. The latter is a deliberate move by Jonsson to make his employees' working hours more attractive. He commented: "I want my chefs to come back to work every week rested and full of energy. [At the moment] that is just not the case."
A collaboration between former lawyer and previously non-professional chef Jonsson, and business partner Aurelie Jean-Marie-Flore, Hedone opened in July 2011 to rave reviews. Jonsson now also oversees the Antidote wine bar and restaurant in London's Carnaby Street, and also sells his on-site baked bread across London restaurants, plus in the Chiswick, Parsons Green and Wimbledon branches of Bayley & Sage.
