Former Fat Duck chef Christopher White to open White Spoon restaurant

Christopher White, former chef at Heston Blumenthal's the Fat Duck and the Hinds Head in Bray, is to open new restaurant the White Spoon in Cheltenham later this month.

Located in Well Walk, the 42-cover restaurant will be White's first independent venture, and is set to open on 18 September, offering three courses for £17 per person, and two courses for £12.

White will run the restaurant with his partner Purdey Spooner. He will serve a menu of lunch and dinner, with dishes inspired by his experience working with Blumenthal and mentor Clive Dixon, but pared down and designed to be "approachable and laid-back".

Typical dishes will include goats' milk custard and goat curd served with beets, scorched carrot and cobnuts; blackened sirloin of beef, potato terrine with pan roasted carrot, king oyster mushroom and onion flavours; and desserts along the lines of a dark chocolate and Cointreau sponge, with white chocolate and honeycomb, served with a burnt orange sorbet and coconut parfait.

The restaurant will close on Mondays, and offer only a long lunch on Sundays.

The chef has previously worked at many other well-regarded kitchens including the Red Lion in Cricklade, the Avenue at Lainston House hotel, the Bunk Inn at Newbury, and the Pheasant Inn at Bassenthwaite Lake, as well as spent time in France and AA-rosette level establishments.

Commenting on his new opening, White said: "Working with the team behind Heston's portfolio is without question a huge influence to me and seeing where they take food is inspiring. I'm not trying to be the next Heston. Instead, the White Spoon will be a restaurant of its own style entirely…serving dishes to savour and enjoy."
