Matt Tebbutt partners with new Hilton Bournemouth hotel
Chef-restaurateur Matt Tebbutt has partnered with the 172-bedroom Hilton Bournemouth to oversee the hotel's Schpoons & Forx restaurant and Sky Bar Level8ight.
The 140-cover, 220 sq ft Schpoons & Forx has an open kitchen and offers a menu including breakfast and brunch, as well as lunch and dinner. It will focus on sharing plates, seasonal ingredients and dishes made using the kitchen's tandoor oven. The restaurant's décor will represent its name, with copper foiled windows, spoons, and forks used in its artworks, along with wood finishes.
Set to open in December this year, the 130-cover, 238 sq ft Level8ight bar will have 50 outside seats, and offer a range of cocktails, spirits, craft beers and wine. It will also serve afternoon tea after midday, and bar snacks. Set to be one of the highest bars in Bournemouth, the Sky Bar will feature floor-to-ceiling windows with views overlooking the bay, plus a centrepiece bar, chandelier-style lighting, and a mix of velvet and leather chairs.
Both restaurant and bar are currently recruiting for staff.

Tebbutt, who closed his Abergavenny restaurant the Foxhunter last year, added: "I have been eager to get back into the kitchen and launch something really exciting and innovative. This new partnership with Hilton Bournemouth will see us open an all-day restaurant and sky bar positioned as real destination venues in their own right."
