MasterChef winner Ping Coombes to be consultant at Chi Kitchen

Winner of BBC MasterChef 2014 Ping Coombes has been appointed consultant chef at pan-Asian restaurant Chi Kitchen.

This will be Coombes' first restaurant project, although she is currently on a month-long research trip to south east Asia to prepare for the role. Her dishes are expected to be influenced by Thai, Chinese, Japanese, Vietnamese and Korean cooking styles, as well as Malaysian.

Signature options will include noodle dishes such as laksa kahwin, a spicy noodle soup with seafood and bean curd; and small plates such as grilled Wagyu beef with enoki mushrooms. For dessert, there will be choices such as coconut and pandan panna cotta with mango and starfruit.

The site will also serve breakfast and brunch, including Coombes' own nasi lemak, a traditional Malaysian dish of coconut rice with anchovies, sambal, peanuts and a fried egg.

Chi Kitchen opened in November 2015, and serves an all-day menu inspired by south east Asia. Its décor has been designed to offer a relaxed atmosphere, with upholstered window booths, and a sushi bar offering freshly prepared sushi and sashimi. There is also a robata grill on show to customers.

Speaking of the appointment, Lim said: "I am so pleased to be welcoming Coombes into the Chi Kitchen family; she's been a good friend of mine for many years. Her food is vibrant and exciting, we are confident that she will be well received with Chi Kitchen's existing customers as well as attracting a new clientele."

Coombes commented: "I am very proud to announce my involvement with Chi Kitchen. I love that they share my approach to food and dining. Asian cuisine is obviously my favourite type of food, it can be simple yet so delicious. I have lots of new ideas, so I can't wait to get started."
