Chef Colin Buchan leaves Pollen for private members' club

Chef Colin Buchan, most recently executive chef of Jason Atherton's Pollen in Singapore, is to take over the kitchen at a new Singapore members' club called 1880.

1880 is set to open in just over six months, offering open plan offices and a networking club in one space.

Buchan will design and execute all of the food menus at the venue, which will have six spaces dedicated to eating and drinking, including a "casually elegant" dining room, a coffee shop, a bar/lounge area and an outdoor terrace, as well as private dining.

Prior to working at Pollen, which he joined in 2012, Buchan has enjoyed a diverse career, including time at Marco Pierre White's L'Escargot, Andrew Fairlie's One Devonshire Gardens and the Square restaurant in London.

Buchan also spent more than a decade in Gordon Ramsay restaurants, starting with Amaryllis in his hometown of Glasgow, and worked as a private chef to David and Victoria Beckham.

Commenting on his new appointment, he said: "I am very excited to be part of the 1880 family, it's such a great opportunity for me and a new chapter in my culinary career. From popular classics to daily changing specials our food will be elegant and unpretentious to inspire the body and mind. Careful cooking with outstanding produce is what 1880 kitchen will be all about."
