Shaun Rankin reveals more details of restaurant at Flemings hotel

Chef Shaun Rankin has revealed more details about his new restaurant, which will open at the Flemings hotel in Mayfair, London later this year.

The 85-cover restaurant, plans of which were originally announced in April 2015, will be named Ormer Mayfair and will open on 14 September.

Executive chef Rankin will run the new venture alongside his existing Ormer restaurant on Jersey, which holds a Michelin star.

Ormer Mayfair will focus on Rankin's Jersey heritage and will take inspiration from the St Helier shores, offering seasonal produce from land and sea, foraged herbs and English wines.

Dishes will include Channel Island scallops, Jersey lobster ravioli in a crab and lemon grass bisque, venison loin with medjool dates, quinoa, parsnips and chocolate tortellini. Desserts such as double chocolate brownie with salt caramel and milk ice-cream will also feature on the menu.

On Twitter the chef said he was proud to be opening the new restaurant and thanked his followers for their support.

The restaurant's interior by Tully Filmer will have an Art Deco feel and will feature dark wood panelling and green leather and velvet banquette seating as part of the hotel's £14m refurbishment.

There will also be two private dining rooms for up to 20 guests and later in the autumn the restaurant will get its own entrance on Clarges Street. Details about the adjoining 40-cover bar are expected to be revealed soon.

Flemings Mayfair is a member of the Small Luxury Hotels of the World.
