Adam Smith's departure leads to restructure of F&B at Devonshire Arms

Two head chefs are to be appointed at the Devonshire Arms Hotel & Spa in Bolton Abbey, North Yorkshire, as part of a restructure of the food and beverage operation at the four-red-AA-star, 40-bedroom property, following the departure of executive chef Adam Smith next month.

Paul Evans is to become head chef of the hotel's four-AA-rosette Burlington restaurant, joining from the Lords of the Manor hotel in Stow-on-the-Wold, Gloucestershire, where he was sous chef. Nick Sharpe has been appointed head chef of the one-AA-rosette Brasserie, having most recently worked as a roaming chef for QHotels.

The two new appointments will enable the two restaurants to be managed as separate businesses, each with their own dedicated kitchen brigade.

As well as Lords of the Manor, Evans has previously worked at L'Enclume in Cartmel, Cumbria; the Waterside Inn, Bray , Berkshire; the Crown at Whitebrook, Monmouthshire; and Hibiscus, London. Sharpe's experience includes working as managing partner and head chef at Inchnarcardoch country house hotel, Fort Augustus, Inverness-shire, and head chef at Noriz restaurant in Perthshire.

Simon Rhatigan, managing director of the Devonshire Hotel and Restaurant Group, which comprises seven properties in Yorkshire and Derbyshire, said: "Following a consistent upturn in sales at the Devonshire Arms Hotel & Spa over the past three years, we've reviewed the needs of the business. Our decision to create two separate kitchen teams at 'the Dev' will allow us to sharpen the Burlington's fine dining offering, as well as to further develop the Brasserie, which is a successful restaurant in its own right.

"Overall we aim to maintain and expand our reputation for excellence within the Devonshire Hotels and Restaurants Group to the benefit of both visitors and assist the rural economy with the creation of new jobs in both the Dales and Peak District areas."

Adam Smith is leaving the Devonshire Arms after three years to move south as executive chef of the Dorchester Collection's Coworth Park, near Ascot, Berkshire.
