Angelo Albera returns to Cantina Del Ponte as head chef

D&D London has appointed Angelo Albera as head chef of Cantina del Ponte at Butlers Wharf, Tower Bridge.

After almost three years working as a speciality chef in Abu Dhabi at the Amici restaurant in Yas Viceroy hotel, Albera has returned to Cantina Del Ponte, where he was previously head chef from June 2012 until August 2013.

The menu at Cantina will be influenced by Albera's travels and will include a variety of classic dishes such as ravioli di melanzone e burrata al pomodoro fresco (ravioli with fresh tomato and burrata cheese), spaghetti allo scoglio (seafood spaghetti) and saltimbocca alla Romana (veal, prosciutto and sage cooked in dry white wine and butter).

David Loewi, D&D London's managing director, said: "We have always loved Angelo's authentic Italian cooking and are excited to welcome him back to Cantina del Ponte."

The restaurant group has more than 30 sites, most of which are in the capital, including Quaglino's, Le Pont de la Tour and Bluebird, as well as the recently opened German Gymnasium in King's Cross.

It operates in London, Leeds, Paris, New York and Tokyo.
