The Pass at South Lodge hotel has three AA Rosettes reinstated
The Pass restaurant at the South Lodge hotel, near Horsham in West Sussex, has had its three AA Rosettes reinstated under new head chef Ian Swainson.
Swainson was named head chef at the restaurant in April, after the departure of Matt Gillan, who spent 10 years at the hotel. He joined from the Samling in Cumbria, where he oversaw a kitchen that achieved three AA rosettes and held a Michelin star for three years.
Gillan launched the Pass in 2008, and won and retained a Michelin star for five years, along with four AA rosettes.
"In just a little over four months, we have created a completely new menu of dishes that are clean, colourful, innovative and pure in their composition whilst delivering complex flavours on the palette, so I am delighted that our food, and the entire dining experience at the Pass, has been recognised. I couldn't be more proud."
